A warm and comforting bowl of soup is what all of us need during the monsoons. High in nutrition and taste, soups certainly are an essential part of a toddler’s diet. They are a great appetizer and also helps in relieving seasonal colds and flu. As monsoons have stepped in, it’s time to indulge in a cozy bowl of soup and enjoy the season. Today, we are sharing some healthy and quick soup recipes that you can prepare in a jiffy and serve to your toddler.
#1. Mixed Vegetable Soup:
Loaded with lots of nutrients, a bowl of mixed vegetable soup acts as a complete meal.
Ingredients:
● 1 tbsp chopped carrots
● 1 tbsp chopped bottle gourd
● 1 tbsp corn kernels
● 1 tbsp chopped tomatoes
● 1 tbsp green peas
● 1 tsp chopped garlic
● Salt to taste
● ½ tsp black pepper
● 2 cups of water.
Method :
1. In a pressure cooker mix all the chopped vegetables and garlic.
2. Add water, salt, and pepper.
3. Pressure cook till 2-3 whistles.
4. Serve the soup with breadsticks.
#2. Sweet Potato Soup:
Versatile and packed with lots of nutrients, sweet potato is a superfood that you can happily serve to your kids during monsoons.
Ingredients:
● ½ tbsp olive oil
● 1 small onion
● 2 garlic cloves
● 2 sweet potatoes
● 500 ml water
● ¼ tsp pepper
Method :
1. Finely chop the onion and add it to a saucepan along with the oil.
2. Mince garlic cloves and add them to the saucepan. Fry it for a couple of minutes.
3. Peel and chop sweet potatoes and add them to the pan.
4. Add the water and bring it to a boil.
5. Cook it on simmer for 15 minutes. Add salt and pepper to taste and let it cool.
6. Blend it with a blender till it turns into a smooth paste.
7. Serve with vegetable sticks.
#3. Carrot and Moong dal Soup:
Moong dal is packed with lots of protein and carrots have all the vitamins needed to boost immunity. This yummy soup is surely going to be your toddler’s favorite.
Ingredients:
● ½ cup soaked moong dal
● 2 tbsp chopped carrots
● ½ tsp turmeric powder
● 1 tsp ghee
● Salt to taste
● ½ tsp pepper powder
● 1 cup Water
Method :
1. Heat ghee in a cooker and add moong dal into it.
2. Now add chopped carrots and saute them for 5 minutes on medium flame.
3. Add water, salt, and pepper powder.
4. Cook it for 3-4 whistles.
5. Mesh and serve it hot.
#4. Eggdrop Soup:
Eggs are super nutritious and are loved by adults and kids alike. This super simple soup recipe is a must-have appetizer during monsoons.
Ingredients:
● 1 egg
● 2 cups vegetable stock
● ¼ cup chopped spring onion
● ½ tsp grated ginger
● Salt to taste
● Pinch of black pepper powder
● 1 tsp olive oil or butter
Method :
1. Whisk an egg in a bowl.
2. Take a pan, add oil to it. Add ginger and saute for a minute.
3. Now add spring onions and saute for a minute more.
4. Add vegetable stock and season it with salt and pepper. Let it come to a boil.
5. Now drop the whisked egg into the soup from a height and stir continuously to get fine threads.
6. Cook it for another 2-3 minutes.
7. Now serve the soup with croutons.
