Ragi or nachni also known as millet flour is a wonderful ingredient having lots and lots of nutritional value. It was lost due to the popularity of wheat and rice grain but now people are trying various recipes with the grain as it is rich in minerals and fibers. During my last visit to the grocery store, I picked up a packet of ragi flour to make those scrumptious dosas at home. I tried two different recipes with ragi and all of them turned out super tasty. These quick and easy recipes are worth giving a try.

Crispy Ragi Dosa:

Dosas are liked by everyone. Ragi is popular in southern part of India and is incorporated in many dishes. I tried making ragi and onion dosa with a twist of cumin and coriander. These dosas are quick to make and are high in nutrients.


• 2 cups ragi flour
• ½ cup split urad dal
• 1 tsp fenugreek seeds
• 1 onion chopped
• 1 green chilli chopped
• 1 tsp cumin seeds
• ½ cup coriander chopped
• Oil for cooking


a. Combine urad dal, fenugreek seeds and water in a bowl. Cover and keep aside for 2 hours.
b. Drain well and blend in a smooth paste.
c. Transfer the mixture into a deep bowl, add ragi flour, salt and 1 cup water. Mix well using a whisk. Cover with a li d and set aside for 12 hours for fermentation.
d. Once fermented, add onion, chillies, cumin seeds and coriander.
e. Now heat a non stick tawa and pour a ladleful of batter on it. Spread it evenly over the tawa.
f. Smear a little oil on the top and cook the dosa until it turns brown and crisp from both the sides.
g. Serve it hot with sambhar or chutney of your choice.

Ragi Laddoos:

During my pregnancy, I tried making sweet delicacies using ragi flour. These ladoos are essential to meet the iron deficiency in pregnant ladies and are tasty as well. Rich in nutrients and irresistibly tasty flavored with cardamom, these ladoos help in building iron and Vitamin B reserves. Grab two of these power pack ladoos when you feel hungry.


• 1 cup ragi flour.
• 6 tbsp ghee
• 5 tbsp powdered sugar
• ¼ tsp cardamom powder


a. Heat ghee in a pan, add ragi flour and cook on slow flame for 4-5 minutes or till it turns golden brown in color.
b. Remove from flame, add sugar and mix well.
c. Add cardamom powder and let it cool.
d. Now refrigerate the mixture for 15 minutes and keep it aside for 5 more mintes at room temperature.
e. Now divide the mixture into equal portions and roll each portion into a round ball.
f. Serve or store in an air tight container.

The above recipe can be made sugar free by replacing sugar with honey or jaggery. It turns out equally yummy and tasty.
