Back from home? Tired? Wondering what to cook? Go for some wholesome one-pot meal dishes. They are convenient to make, scrumptious and are a whole meal in themselves.

So if you are wishing such one-pot recipes to avoid the cleaning mess, we are here to help you with the same.

Here are some easy one-pot meal recipes that you can cook under 30 minutes and require minimum dishes.

1. Vegetable Handvo: A delicious Gujarati dish made with readymade idli batter and loaded with lots of veggies. Serve it with chutney and buttermilk for a complete meal.
Ingredients
● 2 cups ready made idli batter
● ¼ cups grated bottle guard
● 2 tbsp chopped onions
● 2 tbsp grated carrots
● 2 tbsp finely chopped coriander
● 1 tsp sugar
● 1 tsp green chilli paste
● ½ tsp garlic paste
● ¼ tsp turmeric
● ½ tsp chilli powder
● Salt to taste
● 6 tsp oil
● 1 tsp rai
● 1 tsp sesame seeds
● Pinch of heeng

Method:
1. Combine all the ingredients with 2-3 tbsp of water in a deep bowl. Mix well and keep aside.
2. Now divide the handvo batter into 3 portions and keep aside
3. Heat 2 tsp of oil in a pan, add rai, til, and heeng and saute on medium flame for 30 seconds.
4. Pour one portion of handvo batter, spread it evenly. Now cover it with lid and cook for 3-4 minutes on medium flame.
5. Flip it and cook again from the other side for 3-4 minutes.
6. Remove from pan and cut it in quarters.
7. Similarly, make more handvo from the remaining portions.
8. Serve with mint chutney.

2. Healthy Broccoli Fried Rice: A delicious Indian style recipe having crunchy broccoli. We have used brown rice to enhance its nutritional value. You can make it with rice of your choice.
Ingredients
● ½ cup blanched broccoli
● 2 cups cooked brown rice
● 2 tsp oil
● 2 tsp chopped garlic
● 2 whole dry red chillies
● ¼ cup thin sliced onions
● 1 tsp chopped ginger
● 1 tsp chopped green chillies
● ½ cup sliced bell peppers
● 1 tsp soy sauce
● Salt to taste

Method:
1. Heat oil in a non stick pan, add garlic and dry red chillies and saute for 30 seconds on medium flame.
2. Add onions, ginger, green chillies and saute again for 1 minute.
3. Add bell peppers and saute again for 1 minute on medium flame.
4. Add broccoli and saute for 2 minutes.
5. Add brown rice, salt and soy sauce. Toss it gently and cook for 2 minutes on medium flame.
6. Serve hot.
