Be it chinese or italian, mushrooms give an exotic taste to a dish. It is nature’s hidden treasure and is rated as a superfood. Rich in vitamin D and fibres mushrooms are also packed with selenium. We love mushrooms and adding them to any dish creates magic. Mushrooms are versatile and can be cooked in varieties. You can grill, bake, stir-fry, saute, stuff or roast mushrooms to make something new.
Mushrooms have more than 90 percent of water content and the best way to cook them is to allow them to release all the moisture. Always remember to add salt at the end to get juicy and yummy mushrooms. Adding salt in the beginning may turn the mushrooms chewy leaving a dull and tasteless dish. Easy Mushroom Recipes:
1. Baked Mushrooms
Easy and exotic, a perfect recipe to bake mushrooms with herbs. Can be served as a snack or starter.
● 1 cup mushrooms
● ¼ cup chopped onions
● ¼ cup chopped parsley
● 1 tbsp butter
● 1 tsp oregano
● 2 tsp lemon juice
● Salt to taste
● ½ tsp black pepper
a. Remove the stem of mushroom and wash them thoroughly.
b. Combine all the ingredients along with the mushroom in a deep bowl and mix well.
c. Take aluminium foil and transfer the mushrooms into it. Seal it from all the sides.
d. Bake it in a preheated oven for 15 minutes at 200 degree Celsius.
e. Let it cool and serve immediately.
2. Mushroom Curry
A masaledar, Indian style curry cooked with onion, tomatoes, chillies and garam masala. Just perfect and can be made in no time.
● 1 ¼ cups mushrooms
● 1 tbsp oil
● 1 tsp jeera
● 2 dry red chillies
● 2 tsp ginger garlic paste
● ½ cup onion paste
● 1 tsp kasoori methi
● ¼ cup tomato puree
● 1 tsp garam masala
● ½ tsp chilli powder
● ½ cup curd
● Salt to taste
● 1 tsp sugar
a. Heat oil in a deep pan, add jeera and dried red chillies and saute on medium flame.
b. When jeera starts crackling, add ginger garlic paste and saute for few seconds.
c. Add onion paste and kasoori methi and saute for few more minutes.
d. Add tomato puree, mix well and cook on medium flame for 1 minute.
e. Add garam masala, chilli powder and cook on medium flame for 1 minute.
f. Add curd, salt, ½ cup water, mushrooms and sugar mix well and cook on medium flame for 5 minutes till mushrooms are soft.
g. Garnish with fresh coriander and serve hot.
3. Mushroom Toast
The mushroom open toast tastes out of the world and is a great evening snack.
● 2 brown bread slices
● Butter for spreading
● 1 ½ cups chopped mushrooms
● 1 ½ tsp oregano
● 1 cup finely chopped onion
● 2 ½ tbsp plain flour
● 2 tsp chopped green chillies
● 4 tsp chopped parsley
● 1 tomato chopped
a. Heat butter in a pan, add onions and saute till they turn translucent.
b. Add flour, green chillies and saute again for 30 seconds.
c. Add mushrooms, oregano and salt and saute again for 4-5 minutes on high flame.
d. Trim the edges of bread and toast them till crisp.
e. Spread the mushroom mixture on the bread and garnish it with chopped parsley and tomatoes.
f. Serve immediately.
