Time to be a Pro in Baking!!
Ah!! The small of freshly baked cookies is just incredible. I still remember when I was a kid there was a bakery nearby. I always used to go there just to inhale the tempting fragrance of baked items. That was the start of my inclination towards baking. Being a home baker I am very much fond of trying new recipes and today I will be sharing 3 of my most favorite recipes on which I have worked a lot to reach perfection.
1. Nankhatais: These simple, quick, easy to bake and mouth melting cookies are a great snack when served with morning tea. Made from refined flour and ghee, they turn out crispier and soft.
Ingredients: (Yield: 4 pieces)
• 2 tbsp ghee
• 2 tbsp powdered sugar
• A pinch of cardamom
• 4 tbsp refined flour
• 4 tbsp besan
• Chopped pistachios
a. Take ghee and powdered sugar in a bowl and beat them till light and fluffy
b. Now add cardamom powder in the mixture.
c. Sift together refined flour and besan.
d. Now add it in the ghee mixture and knead soft dough.
e. Divide dough into four balls and press them gently.
f. Make an impression of cross with a knife on the top and add chopped pistachio
g. Now bake them in a preheated oven at 180 degree celcius for 20 minutes.
h. Cool the nankhatais and serve.
2. Almond Cookies: I love almond flavor. Before trying this recipe I was quite disappointed as my cookies always turned out dense, dry and crumble. I worked on this recipe until the cookies were PERFECT; light, melt in mouth, almondy and crunchy.
Ingredients: (Yield: 25 cookies)
• 300 grams maida
• 150 grams butter
• 200 grams powdered sugar
• 150 grams almonds
• 1 ½ teaspoon baking powder
• 1 tablespoon milk
a. Sieve maida and baking powder in a bowl.
b. Save 20 almonds and grind the rest. Soak the saved almonds in lukewarm water for half an hour. After half hour cut the soaked almonds in two and strain the water.
c. Take a bowl and add butter and sugar. Beat well until the mixture becomes light and fluffy. Now add the maida mixture into the bowl and mix it gently.
d. Now add ground almonds and milk to knead soft dough.
e. Divide the dough into equal portions and roll out a ball, keep it between your palms and press it gently. Fix the half chopped almond at the centre of the cookie.
f. Bake it in a preheated oven at 180 degree Celsius for 15-20 minutes.
g. Cool the cookies and serve with a hot cup of coffee.
3. Coconut Cookies: Crunchy, sweet and traditional coconut cookies are definitely going to make your evening tea better. Try baking it at home, both kids and elders will love it.
Ingredients: ( Yield : 25 cookies)
• 200 grams maida
• 100 grams butter
• 1 cup grated coconut
• 125 grams powdered sugar
• 1 teaspoon baking powder
• 2 tablespoon milk
a. Sieve together maida and baking powder and keep aside.
b. Beat together butter and sugar till light and fluffy.
c. Now add maida mixture to the butter mixture and mix well.
d. Add coconut and knead into soft dough.
e. Add milk if required.
f. Now divide the mixture into equal portions and make round cookies.
g. Bake the cookies into a preheated oven at 180 degree Celsius for 18 to 20 minutes.
h. Cool and serve with hot tea.
