“If summer had one defining scent, it would definitely the smell of mangoes”. The arrival of summers brings the most delicious and tempting fruit, which can be used in desserts, shakes and even chutneys. Mangoes are my favorite, What about you? I am sure all the ladies out there also wait the whole year for making that scrumptious “aam ka achar” and mango shake to celebrate the season. To be honest, everyone in my family is so fond of mangoes that they binge on this fruit, the whole summer to satisfy their taste buds. There is nothing more satisfying than gorging on a slice of juicy aam in the peak afternoon post-lunch.

Being passionate about cooking and baking since my childhood, I have tried many recipes with this magical fruit. And today, I am sharing some to fill your homes with sweetness this summer.

mango sponge

1. Mango Sponge Cake: My all-time favorite baking recipe. The soft, moist and spongy dry cake, a perfect companion of chilled coffee. Let me tell you a secret, your kids are going to love you more after they take a bite of this cake.

We need to have:
a. 1 ½ cups mango cubes
b. ¼ cups sugar
c. 1 ½ cups plain flour
d. 1 tsp baking powder
e. ½ tsp baking soda
f. ½ cup melted butter
g. ¾ cup condensed milk
h. ¼ tsp vanilla extract
i. ¼ cup milk

How to make it:
a. Combine the mango cubes and sugar and blend them smooth. Keep aside.
b. Sift together flour, soda, and baking powder in a bowl, mix them and keep aside.
c. Beat melted butter and condensed milk till light and fluffy. Add mango mixture.
d. Gently fold the flour into condensed milk mixture using a spatula. Add milk to adjust the consistency.
e. Pour the batter into a greased and dusted tin (7”)
f. Bake it at 180 degrees for 30 minutes.

Serve it with chopped mangoes on the top.

mango-chia-pudding

2. Mango- Chia Pudding: A perfectly sweet, creamy and delicious pudding for all those who are health conscious. A simple recipe that can be served in breakfast or dinner.

What we need:
a. 200 ml coconut milk
b. 1 cup yogurt
c. 4 tbsp chia seeds
d. 2 tbsp honey
e. 1 tsp vanilla extract
f. 2-3 cup peeled and cubed riped mango

How to make it:
a. Mix coconut milk, yogurt, chia seeds, vanilla extract and honey in a bowl. Keep aside for 30 minutes.
b. Add one cup chopped mangoes to the mixture and refrigerate for 1-2 hours.
c. Now add some chilled mixture into a serving glass.
d. Top it with mango cubes. Repeat the layering process.
e. Garnish with fresh mint leaves and coconut flakes.
f. Serve it chilled.
