Ingredients:
- 2 cups makhana
- 1 cup jaggery
- ¼ cup til
- 2-3 tbsp water
- A pinch of salt
- 2-3 tbsp ghee
Method:
- Heat 1 tbsp of ghee in a pan and add makhanas. Toast the makhanas till they are crunchy.
- Dry roast til in another pan for 3-4 minutes. Once done, transfer them into a bowl.
- In the same pan, heat 2 tbsp of ghee and add jaggery. Now add 1-2 tbsp of water into it.
- Let it cook till the jaggery melts. Once done, add a pinch of salt and til into the jaggery.
- Now add the toasted makhanas and give it a nice mix.
- Cool it completely and store the makhanas in airtight container.
- 2. Corn and Palak Tikki : A mouth melting evening snack which is healthy and serves as an easy way to make your kids eat spinach. All you need is some palak, corn, paneer and potatoes to make these filling tikkis. Perfect tea time snack for Lohri evening.
Ingredients:
- 100 grams corn kernels boiled
- 1 tsp lemon juice
- ½ tsp chaat masala
- 400 grams spinach
- ½ cup boiled potatoes
- ½ cup grated paneer
- ½ tsp red chilli powder
- ½ tsp garam masala
- ½ tsp cumin powder
- ½ tbsp Kasoori methi
- Salt to taste
- ½ tsp grated ginger
- 1 chopped green chilli
- 1 tbsp cornflour
- Oil to shallow fry
Method:
- Chop and blanch spinach.
- Grind the corn kernels and keep them aside.
- Now take the ground corn and add chaat masala to it.
- Add blanched palak, boiled potato, and grated paneer to the corn.
- Add all the spices and other ingredients to the mixture and mix it well.
- In the end, add cornflour and mix it again.
- Now make small tikkis out of it and shallow fry them till they turn golden brown.
- Serve hot with green chutney.

Ingredients:
- 50 gms peanuts
- 50 gms almonds
- 50 gms cashew nuts
- 50 gms walnuts
- ½ tbsp fennel
- 200 gms sugar
- 150 gms honey
- 75 ml water
- 1 tbsp butter
- ½ tsp lemon rind
- ½ tsp soda bicarbonate
Method:
- In a pan, dry roast nuts and fennel seeds.
- In another pan,add honey, sugar and water over medium flame.
- Let the sugar dissolve completely and bring it to a boil.
- Cook it till the sugar syrup, when dropped in water, forms a ball.
- Now add the nuts and cook for five minutes.
- Remove from heat, add lemon rind and soda bicarbonate.
- Pour it over a greased baking tray and spread it evenly.
- Once cooled, cut it into small pieces.
- Store the chikki into an airtight container.
- Sarson Da Saag: Last but not the least, Sarson da saag is a must have during Lohri celebration. A comforting bowl of saag served along with makke di roti is the showstopper. Ingredients:
- 1 kg sarson leaves
- 250 gm bathua
- 4 green chillies
- 3 large onions
- 1 tsp turmeric
- 4 tbsp ghee
- 250 gms spinach
- 50 gms makki flour
- 20 garlic cloves
- 1 cup water
Method:
- Clean and pressure cook all the leafy vegetables for 5-6 whistles.
- Now blend the saag till it forms a lumpy paste. Add makki flour and mix it well.
- For the tempering, heat ghee in a pan. Add chopped garlic.
- Once the garlic turns light brown, add chopped onions and chopped green chillies.
- Once onions turn golden, add saag into the pan and cook it for 15-20 minutes on medium heat.
- Now add turmeric powder, mix it well.
- Add ghee on the top of the saag and serve it hot with makki ki roti.
