#1. Lemon Rice:
Tangy and comforting, rice is anyway known to be a lifesaver when you are hungry. This recipe of lemon rice calls for simple ingredients and can be made in a jiffy.
Ingredients
● 1 cup boiled rice
● 1 small onion chopped
● 1 small capsicum chopped
● 1 small carrot chopped
● ½ tsp cumin seeds
● ½ tsp mustard seeds
● 3-4 curry leaves
● 2 dried red chilies
● Juice of 2 lemons
● 2 tbsp roasted peanuts
● Salt to taste
● ½ tsp turmeric powder
● 2 green chilies chopped
● 1 tbsp coriander leaves
● 2 tbsp oil
Method
1. Heat oil in a pan. Add mustard seeds and cumin seeds and allow them to crackle.
2. Now add curry leaves, green chilies, and dried red chilies. Add roasted peanuts and saute for 2 minutes.
3. Now add chopped onion, carrots, and capsicum. Add salt and let it cook till veggies get soft and tender.
4. Now add turmeric powder and rice and mix it well.
5. Add lemon juice and cook it for 2 minutes.
6. Garnish it with coriander leaves and serve it hot.
#2. Veg Mayo Sandwich:
A complete in itself, veg mayo sandwich is best for busy weeknights.
Ingredients:
● Bread slices
● ¼ cup chopped cabbage
● ¼ cup chopped capsicum
● ¼ cup chopped onion
● ¼ cup chopped tomato
● ¼ cup chopped carrots
● ¼ cup boiled corn kernels
● ¼ cup chopped paneer
● 1 cup mayo
● ¼ cup tomato ketchup
● ¼ cup shezwan sauce
● 1 tsp oregano
● 1 tsp red chili flakes
● Salt to taste
● ½ tsp black pepper powder
● ¼ cup green chutney
● Butter
● Cheese slices
Method
1. In a bowl mix mayo, ketchup, schezwan sauce, vegetables, paneer, corn, chili flakes, oregano, salt, and pepper powder.
2. Mix it well and keep it aside.
3. Now take two bread slices and apply green chutney on one and tomato ketchup on the other.
4. Now spread the mayo filling evenly onto the bread slice and place a cheese slice on it. Cover it with another bread slice.
5. Heat a grill pan and apply some butter to it. Place the prepared sandwich and cook it evenly from both sides.
6. Serve the sandwich with some ketchup and potato chips.
